Outlook is a sweet and crisp Raspberry Honey Kolsch, brewed with pure German Weyerman Pilsner and Vienna malt. The malt character is balanced with spicy, earth-driven notes from the generous use of nobel German hops. This kolsch will bring you the crispy freshness of a kolsch with a bittersweet honey finish brought by natural Colorado wildflower honey. Bringing you a flavor that is much like the outlook on life, sometimes bittersweet.

Brewed to a gravity of 23P, meaning this beast had lots of sugars to ferment to give us a bold 10% ABV for our 10th anniversary. Schwarzbier is a German dark lager with the drinkability of a pilsner and the flavor of a porter. Flavors of chocolate with a bit of roasted marshmallows up front, a slight fruity ester note in the middle, then fading to a clean malty finish. Despite the color, it’s a sessionable beer.

A simplistic traditional märzen recipe was chosen as the base beer with a few modern tweaks. The use of cashmere hops adds flavors of lemon and ripe melon that accentuate the biscuit and bready flavors laid out by the malt. Mexican lager yeast was also substituted in to give the beer a drier finish while having very similar characteristics of the traditional fest beer yeast.

As with a traditional ESB, Ryld Rumpus has distinct notes of biscuit, caramel, and toffee with the twist of spice and bready notes from the rye malts. EKG, Willamette, and Fuggle hops provide piney and herbal notes while helping enhance that spice note further.

With a simple base amber recipe of Vienna, Munich, and crystal malts, this beer really accentuates a caramel and toffee forward flavor. Belgian candi syrup also adds to this sweetness with a slight molasses, caramel note. A touch of Hallertau hops lends an earthy spiciness to the character of this beer. Orange peel, cinnamon sticks, and nutmeg were soaked in Amaretto and added post-fermentation.

Steep is a coffee stout brewed with a specially crafted coffee from our neighbors at Corvus Coffee Roasters. Crafted to bring out amazingly rich, chocolate and coffee notes from the malts, Corvus’ Finca El Calagual brings the hints of stone fruit and raspberry yogurt after cold steeping the coffee in this brew for 72 hours. Specially sourced, selected, and roasted, the beans used are a symbiotic complement to the natural flavors in malt, giving balance and depth.

For Donut Panic, we used our Stout recipe, made with Carafa Special III malt, and added our brewer’s favorite dessert in the whole galaxy: cannolis. We then added lactose for creaminess, cinnamon, vanilla, and a hint of lemon to make you feel like you are right in a New York City pastucceria, no matter where you’re hitchhiking in the universe.
