A Beer of Very Little Brain
-
We took the classic American style wheat beer and played with the recipe just enough to make it our own. We used a lager yeast to ferment the beer. The lager yeast was slowly allowed to rise in temperature from 50F to 65F. (This is what is known as a “steam” beer, or common ale.) The warm lager fermentation creates a unique flavor profile that perfectly compliments this style of beer. Honey malt provides a subtle honey flavor without the addition of actual honey.

Unsafe Shores
-
Unsafe Shores Extra Pale Ale is a Summer Crusher with Ekuanot and Dulcita Hops to lend tropical fruit flavors while a malt base of pale gives hints of bread and honey. Specialty malts of Vienna give graham cracker and grape nut hints, and white wheat gives a slightly sweeter and greater mouthfeel. Unsafe Shores was brewed and inspired by our Ex Libris Members. A blend of Amarillo, Centennial, and Cascade dry hops lend a traditional character with a punch of west coast juice. A solid backbone of rich malt flavor with a touch of toasted biscuit provides the balance to our dry hopped pale ale. The aroma is bright citrus and ensnares the palate. The bitterness is light but sharp enough to clear the palate ensuring a highly drinkable experience.

Metafictional Progress
-
Floor malted Maris Otter and Vienna malts create a deep and rich foundation for this IPA with notes of biscuit, graham cracker, and honeysuckle. We layered in an assertive amount of bittering and aroma hops throughout the boil, imparting flavors of sweet orange, lemon, and lime rinds with distant notes of tropical fruit. Dry Hopped with Azacca, Ekuanot and Motueka hops, Metafictional Progress takes on a deceptively sweet and fruity flavor given its crisp and lite body. A whirlwind of tropical citrus, stone fruits and evergreen engulf your senses as you sip, leaving your pallet with the expected dry and bitter finish characteristic of a traditional west coast IPA.

Schwarzbier is a German dark lager with the drinkability of a pilsner and the flavor of a porter. Flavors of chocolate with a bit of roasted marshmallows up front, a slight fruity ester note in the middle, then fading to a clean malty finish. Despite the color, it’s a sessionable beer.

The fire in this beer comes from medium Crystal malt, giving a bright red hue. But no beer would gain a competitive edge without its sponsors. Für Alle
-
A deep amber-gold in color, and smooth and malty on the palate. Vienna and Munich malts build a foundation of bread-like warmth and gentle caramel sweetness. Noble Hallertau hops add subtle, earthy notes mingling with a warm, toasted grain character that brings both comfort and a hint of adventure. Just as Bastian stepped between two worlds, this festbier walks the line between crisp refinement and rich satisfaction.

Lunas starts with a smooth base of pale malts, including white wheat and oats for a fuller body and rich mouthfeel. Then we derived roasty malty flavors from Munich and Vienna malts along with Hallertau traditional and Tettnang hops to add depth to the spice and bitterness. We dug deep into our creativity and identity as brewers, readers and creatives and added bushels of roasted Hatch Green Chilies to give a spicy feel and flavor.

Steep
-
For this Steep, we lived the poetry and asked ourselves, “what if we brewed a beer that had the coffee, chocolate, and malty notes of our classic Steep, but looked more like an IPA in the glass?” We started with a base of pale malts along with white wheat and oats to give a fuller body and smooth mouthfeel. Munich and Vienna malts add a hint of the richness one would expect from a classic stout while Hallertau Traditional and Tettnang hops give this beer just the right spice and bitterness to balance those smooth malty flavors. And then we took Corvus’ Orchard Thief Peche Coffee, steeped for 48 hours alongside cacao nibs and vanilla beans, to create a one-of-a-kind coffee white stout.
