Metafictional Progress

  • Floor malted Maris Otter and Vienna malts create a deep and rich foundation for this IPA with notes of biscuit, graham cracker, and honeysuckle. We layered in an assertive amount of bittering and aroma hops throughout the boil, imparting flavors of sweet orange, lemon, and lime rinds with distant notes of tropical fruit. Dry Hopped with Azacca, Ekuanot and Motueka hops, Metafictional Progress takes on a deceptively sweet and fruity flavor given its crisp and lite body. A whirlwind of tropical citrus, stone fruits and evergreen engulf your senses as you sip, leaving your pallet with the expected dry and bitter finish characteristic of a traditional west coast IPA.

Neko

  • As this beer was inspired by a very spicy talking ginger cat, our flavor inspiration comes from yuzu kosho, a spicy, salty, citrusy Japanese condiment. Neko, uses a Japanese rice ale base brewed with 30% rice, and is medium bodied with a hint of citrus aroma. To develop the kosho character we added fresh yuzu, Szechwan red chilies, and salt. The combination of citrus and spice work in concert to bring forth a tremendous umami experience. Delicately balanced, light, and spicy, just like Tiger Tabby.

  • Steep is a coffee stout brewed with a specially crafted coffee from our neighbors at Corvus Coffee Roasters. Crafted to bring out amazingly rich, chocolate and coffee notes from the malts, Corvus’ Finca El Calagual brings the hints of stone fruit and raspberry yogurt after cold steeping the coffee in this brew for 72 hours. Specially sourced, selected, and roasted, the beans used are a symbiotic complement to the natural flavors in malt, giving balance and depth.
