A Beer of Very Little Brain

  • We took the classic American style wheat beer and played with the recipe just enough to make it our own. We used a lager yeast to ferment the beer. The lager yeast was slowly allowed to rise in temperature from 50F to 65F. (This is what is known as a “steam” beer, or common ale.) The warm lager fermentation creates a unique flavor profile that perfectly compliments this style of beer. Honey malt provides a subtle honey flavor without the addition of actual honey.

  • Calculated Happiness is a simple wheat beer that will provide happiness sip after sip. With a calculated grain base of wheat and farmhouse ale yeast, these typical banana and clove characteristics shine through with complements from Hallertau and East Kent Goldings to provide an earthy, grassy note.

  • A blend of Amarillo, Centennial, and Cascade dry hops lend a traditional character with a punch of west coast juice. Maltering the Deal

  • This year’s Star Wars release takes a turn to the dark side as we are Maltering the Deal. Our famous Never Tell Me the Hops has been overcome by the dark malts of Carafa III and Midnight Wheat that lend rich and crisp but shadowy notes. While the bitterness from the hops has taken hold, there is still hope as you taste the tropical fruits and citrus from the Galaxy, Motueka, and El Dorado.

Silent Trees

  • Designed to represent traditional west coast hop aromas with a more fruit forward kick, 2 dry hop additions of Idaho #7, Motueka and Simcoe were added post fermentation. Finally, we aged the finished beer on Palo Santo wood, contributing additional complex notes of lemon, mint, and coconut, allowing your senses to awaken and wander.

Sneaky Little Hopses

  • This west coast IPA is just that, a balance between a soft and sweet maltiness with a strong bitter hop bite. Brewed with about 90% 2-row base malt and just a touch of Caramalt for a slight toffee note and a touch of color. A classic addition of Chinook hops for bitterness is balanced well with the citrus, melon, and wine must character of Amarillo and Nelson Sauvin hops. All rounded out with Chico ale yeast to add a clean finish. No matter if you are a Gollum or a Smeagol, this beer has something for you.

  • Schwarzbier is a German dark lager with the drinkability of a pilsner and the flavor of a porter. Flavors of chocolate with a bit of roasted marshmallows up front, a slight fruity ester note in the middle, then fading to a clean malty finish. Despite the color, it’s a sessionable beer.

  • Feline Sensibilities uses Caramunich II and Root Shoot’s Munich 10 for a malty base; Northern Brewer Hops for a hint of Pine, mint, and tobacco.   • Deep mahogany in color with a sturdy cream head, this ale is as bold and complex as the Scotsman himself. Notes of toffee and toasted malt from Root Shoot's Cara Ruby malt with sensual spices coming from the rye malt and Willamette hops. It’s a beer made for cold nights by the hearth, where stories unfold and hearts remember.
